Having become a signature dish of Chinese cuisine—comparable to sweet and sour pork or dim sum—Peking duck is indeed a savory masterpiece that must be properly appreciated. The cooking method is said to have been imported by colonists, notably through Marco Polo during the Yuan Dynasty (1271–1368). The Chinese then discovered the advantages of roasting meat. Originally prepared during the Ming Dynasty for the imperial court, the duck, which was cooked in wood-fired ovens, quickly became the preferred dish of Emperor Qianlong and Empress Cixi. Others claim that the Peking duck recipe originated during the Northern and Southern Dynasties (420–589) and subsequently spread to Beijing.

An emblematic dish of Northern Chinese cuisine, Peking duck is an exceptional meal requiring extensive preparation before being savored. Authentic Beijing Peking duck is virtually impossible to recreate in France, as it uses a force-fed Beijing duck raised for two months until it reaches an average weight of 3 kg. The preparation and glazing and cooking techniques follow a special ritual. After being cleaned and eviscerated, the duck is skewered. The skin is dried and then coated with a honey-based mixture. It is then placed in a large wood-fired oven. The duck is regularly turned and basted with the glaze mixture to achieve the desired lacquer. Once properly roasted, the duck displays a beautiful, crispy reddish skin and tender meat. In fine dining establishments, the duck is served and carved into thin slices at your table by the chef. It is then presented with several delicate accompaniments such as thin mandarin pancakes, scallions, onions, and cucumber. The duck is rolled in the pancake along with the vegetables present, then dipped in sauce before being enjoyed. Peking duck is a true culinary art not always easy to master. Today in Beijing, it's not always simple to find a restaurant that practices the authentic method of preparing Peking duck.
